Ingredients for Kajal Aggarwal’s Special Samosa Recipe:
For the samosa dough:
- 260 grams of all-purpose flour
- 80 grams of butter
- Salt to taste
- 1 1/2 cups of water
- 1 tablespoon of carom seeds (ajwain)
For the samosa filling:
- 2-3 tablespoons of vegetable oil
- Cumin seeds
- Coriander seeds
- Finely chopped green chilli
- Coriander leaves
- Potatoes (mashed)
- 50 grams of peanuts
- Green peas
- Paneer (optional)
- Salt and Hing powder (asafoetida) to taste
Cooking Method:
- In a bowl, mix the flour, salt, and carom seeds. Set it aside to prepare the samosa cones later. Keep some water mixed with oil or maida (all-purpose flour) aside, as it will help in shaping the cones.
- For the filling, heat oil in a pan and add cumin seeds. Add mashed potatoes, green chillies, salt, and all the spices. Cook the filling for 15 minutes until it blends well with the spices. Add dry fruits, smashed paneer or cubes, and cook for an additional 2 minutes.
- Now, let’s prepare the samosa cones. Make small balls of dough and roll them into puri-sized circles. Cut the circles into semi-circles and fold them into a triangular shape. Use some oil or the maida-water mixture to seal the corners of the dough. Fill the cones with the prepared filling and seal them using your fingertips.
- If you prefer, you can also purchase pre-made samosa cones from the market and focus on preparing the filling.
- Heat a frying pan with a generous amount of oil and fry the samosas until they turn crispy and golden brown.
Voila! The Khasta samosas are ready to be savoured. Kajal Aggarwal’s recipe promises a delightful snack that pairs perfectly with your favourite chutney or tomato sauce. So, don’t hesitate to try this must-try monsoon delicacy at home and indulge in its mouthwatering flavours.
